Fruitlife fruit in your (easter) recipes
As spring transitions into summer, it's time to enjoy the delicious Fruitlife fruit the season offers us. One of our favourite summer berries is red berries. These small, bright red berries are delicious, refreshing, and packed with nutrients such as vitamin C, fibre and antioxidants.

Red berries can be eaten in several ways, whether as a snack, in a fruit salad or as an ingredient in a delicious dessert. But did you know that red berries are also a great addition to savoury dishes?
I like to mix them into a salad with goat cheese and walnuts. The sweet flavour of the berries goes perfectly with the creamy goat cheese and crunchy walnuts. Add some fresh spinach or arugula for a healthy and flavorful salad which is perfect for lunch or light supper.
'Just' a sweet temptation
If you are looking for something sweet, you can incorporate red berries into a delicious summer pie. Combine the berries with other summer fruits such as strawberries and peaches, and bake them together in an airy cake or pie base. Serve the cake with a scoop of vanilla ice cream or a dollop of whipped cream for an extra festive touch.
Savoury cake
But red berries can also be tasty if you prefer savoury dishes. For example, try using red berries as a topping on a savoury pie with leeks and salmon. The fresh taste of the berries provides a wonderful contrast to the tender salmon and savoury leeks.
Red berries made into a deep red sauce
Or make a sauce from red berries to serve with a piece of grilled meat, for example. Boil the berries with a little sugar and a splash of balsamic vinegar until soft, then puree them into a smooth sauce. Season with some salt and pepper and serve, for example, with a piece of grilled chicken or pork from the bbq.
